Carrot Ginger Soup

A warming light and cheery soup with gingery after tones to cuddle up to on a blustery winter day.

Over the holidays I was diagnosed (again) with high cholesterol & border line diabetes. I’ve decided to take this as a serious call to action. Even though I eat a pretty clean diet – does giving up wheat, coffee and rice count ?

With the help of my PSW(personal support worker) we were able to whip up this delicious comforting soup as I embark on a 4-day diet experiment. Hugely grateful to her for helping me heal from auto accident. Here is her plate,

You need

3 carrots, washed, peeled and boiled till soft, then pureed
1 tsp, fresh ginger minced
1/2 tsp turmeric
1/4 tsp cayenne (reduce for lesser heat)
salt to taste
1/2 fresh lime
1/4 tsp cumin
1 tbsp cooking oil

Heat oil in pan, Stir in spices and saute lightly. Toss in the pureed carrot, add salt and 1 cup water. Add more water if you like a thinner soup. Let come to boil so that there is no raw smell. Take off stove, add lime & done.

Serve piping hot topped with roasted peanuts or any other nuts of choice and some bread!
