Lightly puffed rice flakes, potato cubes, grated coconut, a dash of lime, a smidget of cilantro leaves, these are what make a nice poha. Its what my mom makes best so I’ll share her recipe with you.

I’m always stunned by how quickly this delicious  dish gets made. I use the time it takes for the onion to be sauted, to cut and prepare the vegetables and rinse the poha.

3 cups poha
1 tbsp green peas
1 tbsp raw peanuts
1 tbsp cauliflower florets
1 tbsp carrot peeled & cubed
1 tbsp potato peeled & cubed
Spice Mix
pinch turmeric
1 tsp fresh ginger
¼ tsp cumin seeds
1 ½ tsp coconut oil
1 medium red onion
Serves 4

Pots n pans
Wok or frying pan

juice of ½ lemon
1 tbsp grated coconut
1 tsp cilantro leaves, chopped


  1. Drizzle poha with cold water quickly & let stand.
  2. Chop onion, ginger, green chili and set aside.
  3. Heat oil in wok. Add cumin, onion, green chili and ginger. Let onions cook.
  4. Meanwhile cut remaining vegetables. Add to cooked onion, add turmeric, sprinkle some water, cover with lid and let cook. SOS pressed for time, just steam the vegetables in microwave about 1 minute.
  5. When vegetables are lightly cooked, add moistened poha to the pan.
  6. Stir fry about 1 minute till poha is cooked. SOS keeping the lid on the pan on a low fire helps poha cook & puff up quickly.
  7. Turn off heat, let poha sit about a minute.
  8. Squeeze lemon juice, add salt to taste, cilantro and coconut. Fluff poha with fork before serving with a dollop of clarified butter or ghee.

Health benefits
Poha is easy on the stomach and light to digest. There are thick and thin varieties of poha. SOS If you use the thick variety, then you can rinse the poha under water before cooking, but if you use the thin variety, just sprinkle some water on the poha to moisten it–otherwise you’ll end up with mushy poha.

Fun facts
Poha is a favourite of Krishna, my favourite Indian god. Legend has it that Sudama a poor childhood friend set out to meet Krishna with nothing other than some poha his wife tied in a cloth for Krishna. However upon meeting Krishna in his resplendent palace, Sudama was ashamed of his poor gift and started to turn back home. Lord Krishna would have none of that & could spot the poha hiding away in Sudama’s parcel and fell upon it with much gusto and enjoyment. Krishna was so moved by Sudama’s gesture of gifting everything and expecting nothing in return that he showered his poor friend with worldly riches. He said, “Sudama, the poorest gifts given to me with love is dearer to me than the richest of gifts given without love”. Don’t you just love this beautiful timeless story..

Suggested Pairing
