
Perfect for a picnic, potluck. My best memories are carrying this for train journeys. Going to visit my grandparents in the south took us 3 full days by train from Delhi. The train had everything deliciously imaginable for a child. A library to borrow books, vendors who kept passing by with cutlets, coffee & snacks. amazing station vendors with unique foods. and fellow passengers who would happily share food.
You need
1 cup cooked rice, short grain is best, I used sona masoori
1 tsp fresh lemon juice
1/2 tsp mustard seeds
1/2 tsp urad dal
1/2 tsp channa dal
2 dry red chilies, split
1 tsp split cashews
1 tsp curry leaves
pinch hing
1/2 tsp turmeric powder
1 tsp diced fresh ginger
salt to taste
1 tbsp oil
Heat oil. Add mustard seeds. When they splutter add urad, channa dal & cashews. let lightly brown before adding curry leaves, hing, ginger and then turmeric. Add the dry red chilies. Turn off heat. Pour the spiced oil over the cooked & cooled rice. Add in lime juice & salt. Stir everything till rice is well coated with the spice oil. Serve warm or room temperature with a potato curry.
